Herb and Garlic Chicken with Red Potatoes & Green Beans
Hi Friends,
Today I have a tasty chicken dish recipe to share with you. I had bought a package of chicken breasts that were about 1 pound for each piece. (The whole package weighed over 6 pounds!) That was way too much for me to eat so I cut it in half. Now I have leftovers for lunch!. π
Ingredients:
Boneless Chicken Breasts
Red Baby Potatoes
Frozen Green Beans
Herb & Garlic Seasoning
Cooking Spray
Butter
Preheat oven to 350 degrees.
Toss the chicken breasts with garlic & herb seasoning.
Cut the baby red potatoes into bite size pieces and toss them with the garlic & herb seasoning.
Toss the frozen green beans with the garlic & herb seasoning.
Spray a glass baking dish with cooking spray. Add the chicken, potatoes and green beans.
Add a little bit of butter on top of chicken, potatoes & green beans.
Cook 1 hour. Make sure chicken cooks to 165 degrees.

Crockpot Stuffed Peppers
Hi Friends,
I don't know about you but I love stuffed peppers. I can remember going over to my Grandma's house and walking in the door and the aroma would be heavenly. My Grandma's recipe for stuffed peppers is a lot different from mine and it took her a lot longer to make them. I still remember the taste of the sweet raisins and homemade stuffing she would stuff the peppers with. It was an old Italian recipe passed down through her generation. I am fortunate to have that recipe in my family recipe file and someday when I have more time I would love to make them.
Today I have for you my "Crockpot Stuffed Peppers" recipe. My hubby and son ask for these all the time. They are so simple to make.
These are the ingredients you will need:
1 pound ground beef
3 cups long grain white rice
1 carton ( 32 ounces) chicken stock
1 packet onion soup mix ( I use Lipton)
6 red and orange peppers
2 Tbsp butter
salt & pepper
Step 1: Make the rice (I use my Power Cooker for this step)
Set the Power Cooker to the rice setting. Melt the butter in the pot.
When the butter is melted, add the rice and stir. Add the chicken stock and onion soup mix. Stir and mix well.
While the rice is cooking go on to step 2.
Step 2: Brown the ground beef and season it with salt & pepper. When done, drain the beef and return to the same pan.
Step 3: When rice is cooked combine it with the cooked ground beef.
Step 4: Cut the tops off the peppers. You may need to cut some on the bottom of the peppers too to help the pepper stand up. Be careful you don't cut off too much on the bottom or you will form a hole and the stuffing will come out the bottom. (Been there, done that!!! LOL)
Step 5: Stuff the peppers and place them in the crockpot. Add a little water to the bottom of the crockpot so the peppers don't stick.
***Note*** You will have leftover stuffing mixture. I just put it in the refrigerator as leftovers. It makes a good lunch. π
I cook the peppers on high for 4 hours. They come out nice and tender.
I usually serve them with a salad and a veggie.

Dinner Plans Changed
Hello Friends,
I'm sure you all have had days when your plans don't go according to plan. Today was one of those days for me. π I did manage to go grocery shopping so that was a good thing, but by the time I got back it was too late to make a big dinner like I had planned so I had to settle on a simple sandwich instead.
Here is the haul from my shopping. I like to shop at Aldi; especially for their produce. I also shop at Stop & Shop.
Like I said at the beginning of this post. I only had time to make a simple sandwich. So for tonight's dinner I made tuna salad sandwiches.
My tuna salad recipe is very simple to make.
Serves: 1
Ingredients:
1 pkg (single serving) chunk light tuna
1/8 cup chopped red onion
1/8 cup chopped celery
2 Tbsp lite mayonnaise
dill pickles
lettuce
2 slices wheat bread
Mix together the tuna, red onion, celery and mayonnaise in a bowl.
Toast the bread.
Spread tuna mixture on toast, add pickles and lettuce.
Enjoy π
I would have taken a photo of the finished sandwich but I ate the sandwich before I remembered that part. LOL The next time I make the sandwich I will insert a photo of it in this blog post.
Instead of waiting a week to share my next recipe I am going to post another blog post tomorrow of the dinner recipe that I was going to make today.
