I'm sure you all have had days when your plans don't go according to plan. Today was one of those days for me. 😕 I did manage to go grocery shopping so that was a good thing, but by the time I got back it was too late to make a big dinner like I had planned so I had to settle on a simple sandwich instead.
Here is the haul from my shopping. I like to shop at Aldi; especially for their produce. I also shop at Stop & Shop.
Like I said at the beginning of this post. I only had time to make a simple sandwich. So for tonight's dinner I made tuna salad sandwiches.
My tuna salad recipe is very simple to make.
Serves: 1
Ingredients:
1 pkg (single serving) chunk light tuna
1/8 cup chopped red onion
1/8 cup chopped celery
2 Tbsp lite mayonnaise
dill pickles
lettuce
2 slices wheat bread
Mix together the tuna, red onion, celery and mayonnaise in a bowl.
Toast the bread.
Spread tuna mixture on toast, add pickles and lettuce.
Enjoy 😊
I would have taken a photo of the finished sandwich but I ate the sandwich before I remembered that part. LOL The next time I make the sandwich I will insert a photo of it in this blog post.
